The work of the sake brewery "Yoshinogawa", which has continued for 460 years in Niigata, is covered over a year, from the production of sake rice, which is the raw material that the brewers themselves handle, to the traditional Daiginjo preparation that takes place in the middle of winter. We regard all of the sake brewing from spring, summer, autumn and winter and the Saijiki that the brewery carefully protects and conveys as a culture that Japan is proud of. This is a 86-page special feature that is a must-see for delicious drinking and sake-based stew, which is our specialty.

This special feature is the work of a sake brewery in Niigata called "Yoshinogawa". Yoshinogawa is one of the oldest warehouses in Japan, which has been around for 460 years.

When I interviewed sake brewing, I thought that this is a collection of amazing technologies that identify the individuality of rice one by one and control innumerable microorganisms. Natural work overlaps there, and sake unique to this country is born. Also, sake is with the four seasons of Japan. There are seasonal jobs to make, and there are seasonal ways to enjoy drinking. It can be said that it is the crystallization of the wisdom of manufacturing and living that has been gradually shaped through the various hardships that our ancestors have experienced and in prayer and gratitude.

Yoshinogawa's brewers (people who work in the brewery) are also farmers. The brewers themselves make rice and bring the rice to make sake in the winter when the rice fields are covered with snow. The raw material rice has been loved since it was a seedling and is carefully brewed in sake --- Fudebako is from growing rice to preparing Daiginjo in winter. , I spent a year covering all of the sake brewing. There are lots of topics such as the Kojimuro, which is the heart of the brewery, which usually does not allow others to enter, and the brewery's New Year's scenery and delicious drinking methods, even in stories other than preparation!

In No. 13, there are other tin liquor vessels that are said to make sake delicious, the old and new story of a bottle that is intertwined with the bottle recycling system, and the lacquer work pencil case that President Hakuhodo customized with Wajima lacquer. We asked the representative production areas of Tosa, Mino, and Echizen to make paper, and followed up to the point where the paper was made from the raw materials. In addition, the functionality seen from the work that Japanese paper is indispensable for, such as making gold leaf and restoring cultural properties. This is a 72-page special feature.

This special feature is "Wa-no-kami". I didn't dare to use "Washi" because the definition of the word is ambiguous and causes various misunderstandings. When you think of Japanese paper, you may have the image that it has uneven thickness and wrinkles, and that it has a natural color and pressed flowers. However, even if it is handmade, some papers are pure white, and some papers have the same thickness and are perfectly aligned. The original appearance is to make them according to the purpose and the required functions. Handmade has other irreplaceable characteristics, but there is also machine making that makes the best use of the goodness of Japanese paper. In any case, what is important is not to impair the properties of the raw material fiber, which is the essence of making washi. That is the condition that can be "paper that lasts for a thousand years."
